Sourdough Gingerbread Cake with Lemon Sauce
3/4 cup brown sugar
1/2 cup melted butter
3/4 cup molasses
2 eggs
1 cup sourdough starter
1/2 tsp baking soda
1 cup flour
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp fine sea salt
1/2 cup hot water
Directions:
1. Preheat oven to 350° F.
2. Grease a 9" pan.
3. Cream together the brown sugar and butter until smooth.
4. Mix in molasses, eggs, sourdough starter, and baking soda.
5. In a separate bowl, combine the flour, ginger, cinnamon and salt.
6. Add the dry ingredients to the wet mixture and stir. Then mix in the hot water until just combined.
7.Spoon the batter into the prepared pan. Bake for 40-45 minutes, or until a toothpick in inserted into the middle comes out clean.
8. Serve warm with the Lemon Sauce drizzled over the top.
Lemon Sauce
1/2 cup sugar
1 Tbsp. cornstarch
Pinch of nutmeg
1 cup hot water
2 Tbsp. butter
1/2 tsp grated lemon zest
2 Tbsp. lemon juice
Directions:
1. In a small sauce pan mix the sugar, cornstarch, nutmeg, and hot water.
2. Cook over medium heat stirring continuously until mixture is clear and thick.
3. Remove from heat and add the butter, lemon zest, and lemon juice. Stirring until the butter melts. Serve hot.
